With a new menu that focuses on the ingredients behind Cali classics, guests can immerse themselves in the preparation of each dish through the main ingredient, highlighting, for example, octopus, oysters, shrimp, and tuna. Of course, the Peruvian classics remain, so many can indulge in a delicious Lomo Saltado or a hearty Arroz con Pato.

“Cala’s new menu seeks to highlight ingredients, such as Popeye crab, sole, octopus, and gizzards; we’re always working to find the best preparation for each product, respecting closed seasons and sustainability. Thus, we’ve developed each dish and each cocktail to maximize the flavor and potential of each ingredient,” explains José Alfredo Aramburú, the chef behind the concept.

With a 360° view, Cala also surprises with a complete overhaul of its tableware and glassware, demonstrating that every detail of this gastronomic experience matters.

At Cala, the bar is also a star: with signature cocktails led by head bartender Manuel Cigarrostegui. You can enjoy, for example, options featuring sea urchin, octopus, and other marine treasures reinvented for the palate. Furthermore, its production is 100% sustainable and regional. Must-trys include “Octopus,” with Johnnie Walker Black, Degollador, mezcal, sour orange, octopus honey, and cocoa; and “Curandero,” with Aqará Rito, Andean cordial, Aperol, Sinsonte, lemon cider, and cecina salt.
